Super Easy Chanukah Potato Latke Recipe

So easy - just don't tell anyone and they will think you slaved over potatoes with a peeler for hours.

Easy Chanukah Potato Latke Recipe

4 cups frozen hash browns (the grated kind) partially to mostly thawed (otherwise the eggs will freeze - trust me on this)
1 large onion, finely chopped (don't skimp on the onion!)
3 tablespoons matzo meal or flour
3-4 eggs

Oil for frying

Combiner all ingredients except oil. If using matzo meal, let mixture stand for a few minutes before frying.

Place spoon fulls of mixture in 350o - 375o F oil in frying pan (1/4" - 1/2") and flatten with pancake turner. When brown, carefully turn and fry the other side.

Serve fresh and hot with apple sauce or sour cream.
